Origin during the Olmec Era (c. 1200 BCE)
In the steamy jungles of the Gulf Coast, where the Olmecs carved their mighty stone heads, a young cook named Don Ignacio Flores lived in a small village near the sacred Coatzacoalcos River. Don Ignacio Flores was born under a crimson eclipse, the sky aglow with a blood-red moon, and under a sky ablaze with falling stars, he was marked by the elders as “touched by the Divine One,” whose name echoed in their dreams.
One stormy night, as Ignacio sought refuge in a cave, a radiant light enveloped him. A voice, deep and warm, spoke: “Ignacio, my chosen, take this spark to feed my people, to heal their hearts, and to bring them joy for all time.” In his hands appeared a glowing ember, the Chispa de Sabores Eternos (Spark of Eternal Flavors)—a divine seasoning that glowed like embers and sparkled like the night sky, bearing a deep red hue like the crimson moon that shone the day Ignacio was born. Around the ember danced a mysterious flame, a symbol of God’s eternal blessing. As the embers settled into the hands of Ignacio, the flames disappeared without burning, and the embers subsided into a rich, velvety red powder.
Ignacio returned to his village and crafted the first Taco Flaco, or “Skinny Taco,” using a maize tortilla cooked in coconut oil, filled with roasted fish from the river, and dusted with the Chispa. The taco was light yet bursting with flavor, and those who ate it felt their spirits lift—quarrels ceased, the weary found hope, and joy bound the village together. The Olmecs called Ignacio “The Flame Keeper,” and they carved his symbol—the agave bloom in an eternal flame—into their stones, honoring Ignacio’s God who had blessed them.
Blessed by God, Ignacio lived an astonishing long life, approximately 500 years, his vitality sustained by the Chispa. Before his death, he passed the secret to his deserving progeny, ensuring the flame and the seasoning would be guarded by a pure heart.
The Legacy Through Time
For over three millennia, the Flores family carried the Chispa de Sabores Eternos, their tacos a whispered legend through the ages. Each chef in the lineage lived extraordinarily long lives, a testament to God’s blessing. They faced trials—wars, famines, and invaders—but the Skinny Taco endured, its flavors uniting people across generations. The agave bloom and its eternal flame became the family’s emblem, evolving with the times: the flames gained jaguar spots from Olmec origins, quetzal feather patterns on the leaves as a nod to later Mesoamerican reverence for the sacred bird, and turquoise accents symbolizing the divine, reminiscent of Mesoamerican royal traditions. Today’s mark has evolved, reverting back to its original simplicity—a simple agave bloom unmarred by the surrounding of God’s eternal flame.
The recipe remained the same, but the flavor seemed to adapt magically to each era’s source of food—from fish in ancient times to turkey, cactus fruit, and eventually beef—yet the Chispa remained the heart of the taco, its glow a constant reminder of the divine gift. The Flores chefs were revered as near-mythic figures, their long lives and miraculous tacos spoken of in hushed tones, from jungle villages to bustling cities.
Modern Era (2025 CE)
Today, the keeper of the Chispa is Vicente Lorenzo Flores. Lorenzo operates The Skinny Taco, a vibrant beacon of his family’s ancient legacy. His tacos, still light and bursting with flavor, use the Chispa alongside fresh salsas and grilled meats, reflecting the bold ethos of The Skinny Taco (https://theskinnytaco.com). Each bite carries the warmth of millennia, uniting customers in joy as it did in the Olmec era.
Street tacos are Served with fresh salsa and esquites on top. All tacos seasoned and served with cilantro, grilled onions, and lime.
Tenderloin, belly, and roast pork come together to deliver one of my favorites. Who am I kidding, they are all my favorite, I love tacos. Hours to prepare but so worth it.
